my parents just turned me on to this wonderful veggie...you must try it! boiled with butter and salt, it's amazing but it can also be a refreshing substitute for spaghetti pasta...

Just a thought...
I have about 4 or 5 lentil soup recipes I can add as well. Shall we start a Memories section of types of food for easy access to recipes later?

Spiced Lentils [Feb. 6th, 2005|12:55 pm]

INGREDIENTS
1 1/2 cups Puy [green] lentils
7 oz feta cheese
5 tablespoons sun-dried tomato paste
small handful of fresh chervil or flat leaf parsley, chopped, plus extra for garnish


1-Place the lentils in a heavy pan with 2 1/2 cups of water. Bring to a boil, reduce the heat, & cover the pan. Simmer gently for about 20 minutes, until the lentils are just tender & most of the water has been absorbed.

2-Crumble half the feta cheese into the pan. Add the sun-dried tomato paste, chooped chervil or flat leaf parsely, & a little salt & freshly ground black pepper. Heat through for 1 minute.

3-Transfer the lentil mixture & juices to warmed plates or bowls. Crumble the remaining feta cheese on top & sprinkle with the fresh herbs to garnish. Serve the lentils immediately.

Serves 4.

Green Lentils with Sweet Onions [Feb. 6th, 2005|12:49 pm]

INGREDIENTS [sorry it's not metric!]
2 tablespoons sunflower oil
1 small onion, chopped
2 garlic cloves, crushed
1 cup green lentils
2 1/2 cups vegetable broth
2/3 cup red wine
1 teaspoon chooped fresh sage, or a pinch of dried sage
8 oz pearl onions, peeled
2 tablespoons butter
4 tablespoons soft light brown sugar
salt & ground black pepper
1/2 cup salted cahews & thyme sprigs to garnish


1-Heat the oil in a flameproff casserole & fry the onion [chopped] & garlic until soft. Add the lentils & fry gently for 3 minutes.

2-Stir in the broth, red wine, sage, & seasoning. Bring to a boil. Cover & simmer gently for 20 minutes, stirring occasionally, until the lentils are tender. Add more liquid if necessary.

3-Meanwhile, in a small frying pan, gently fry the onions [pearl] with the butter & sugar for 5-7 minutes, until the sugar begins to caramelize & the onions are just tender. Stir occasionally.

4-Serve the lentils sprinkled with the cashews, garnished with the thyme sprigs, & accompanied by the onions.

Serves 3-4.

just tried making "Crispy Lentil Balls", they were nice, but the recipe needs perfecting a little, before I share it!! :0p I love experimenting with new food. I got loads of lentils at the weekend, so recipe suggestions, more than welcome!! :0)

Veggie Stir Fry reminded me...
2 nights ago I stir-fried zucchini, broccoli, cauliflower, carrots, celery, mushrooms & tofu in a thickened miso-flavoured sauce. Then I put it all over cellophane noodles. Yummy Yum!

for the past two nights, no meat has touched Glenn's lips! Last night we ate a Bean Curry, and tonight a Vegetable Stir-Fry! :0) Yummy! He is also really helping me, not to eat meat, and I feel SO much better, my stomach isn't hurting as much. :0)

i only drink skimmed milk, but lately i have noticed how ill and violent pains i get in my stomach after drinking it, either in coffee, or on cereal. so we bought some soya milk the other day and its so nice, and i great replacement for dairy milk. its a chilled version, i hated the off the shelf version (this is different as its in the fridge with the other milk), that isn't that nice.

i've noticed a little that only two days after not eating meat, my body feels like its craving meat. i don't know why though. :0S i certainly not tempted to eat any. :0) i had a vegetable chinese while glenn had a meat one. than tonight i had veggie fingers while he ate a meat pie. i don't think he is going to go cold turkey (forgive the terrible expression) as me, but he's not dissausing me. :0)
